1 Hilary’s Super Cauliflower Veggie Burger
1½ cups Earthbound Farm Organic Baby Spinach and Baby Arugula
1/3 cup shredded red cabbage
¼ of an avocado, sliced
6 slices cucumber
3 slices yellow bell pepper
4 slices tomato
Handful of Alexia Waffle Cut Sweet Potato Fries
Ranch dressing, or dressing of choice, for drizzling
- Prepare veggie burger and sweet potato fries according to package instructions. Set aside and keep warm.
- Fill bowl with baby spinach and baby arugula, shredded red cabbage, avocado, cucumber, yellow bell pepper, and tomato.
- Top with veggie burger and a handful of sweet potato fries.
- Drizzle bowl with ranch dressing, or preferred salad dressing. Serve immediately.
