Truffle Parmesan Potato Puffs

These crispy potato puffs are seasoned to perfection with our Italian White Truffle Olive Oil, Parmesan cheese, parsley, and crushed red pepper. Serve with this easy Garlic Lemon Mayo for a fantastic appetizer. Serves 6.

Ingredients

  • 1 bag Alexia Foods Organic Yukon Select Puffs
  • 1 tablespoon Barons Italian White Truffle Olive Oil
  • 2 tablespoons shredded Parmesan cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon parsley, chopped
  • Crushed red pepper (optional)
  • 1/3 cup mayonnaise
  • 2-3 tbsp. Majestic Garlic Original Creamy Garlic Spread
  • 1 tsp. fresh lemon juice

Directions

  1. Combine mayonnaise, garlic spread, and lemon juice in a small bowl. Mix until thoroughly combined and set aside.
  2. Line a baking sheet with parchment paper. Spread Potato Puffs on sheet and toss with truffle olive oil until evenly coated. Bake according to package instructions.
  3. Remove from oven and toss with Parmesan, parsley, and crushed red pepper.
  4. Serve immediately with garlic lemon mayo, if desired.
