Spinach and Arugula Salad with Cranberry Goat Cheese

This festive salad includes Cranberry Cinnamon Goat Cheese, fresh apple, and glazed pecans. Mix our Pomegranate Balsamic Vinegar with olive oil to make the perfect fall-inspired dressing. Serves 4.

Ingredients

  • 1 5-ounce package Earthbound Farms Baby Spinach and Baby Arugula Mix
  • 1 4-ounce log Celebrity Cranberry Cinnamon Goat Cheese, crumbled
  • ½ cup glazed pecans
  • 1 apple, chopped
  • ½ red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon Barons Pomegranate Balsamic Vinegar
  • Salt and pepper, to taste

Directions

  1. In a small bowl, whisk olive oil and balsamic vinegar until combined. Season with salt and pepper and set aside.
  2. Combine all salad ingredients into a large bowl.
  3. Drizzle with dressing and gently toss until evenly mixed. Serve immediately.
