1 pound rainbow carrots, washed and peeled
2 tablespoons Barons Garlic Olive Oil
1 teaspoon salt
1 tablespoon honey
Fresh cracked pepper, to taste
Fresh thyme, for garnishing
- Preheat oven to 400°F.
- On a large baking sheet, toss carrots with olive oil, salt, honey, and pepper.
- Spread out evenly on baking sheet and roast for 35-40 minutes, or until desired tenderness is reached.
- Remove from oven and garnish with fresh thyme, if desired. Serve immediately.
