Honey Roasted Rainbow Carrots

These rainbow carrots are roasted simply with olive oil, salt, and honey. Serve alongside roasted chicken or turkey. Serves 6.

Ingredients

  • 1 pound rainbow carrots, washed and peeled
  • 2 tablespoons Barons Garlic Olive Oil
  • 1 teaspoon salt
  • 1 tablespoon honey
  • Fresh cracked pepper, to taste
  • Fresh thyme, for garnishing

Directions

  1. Preheat oven to 400°F.
  2. On a large baking sheet, toss carrots with olive oil, salt, honey, and pepper.
  3. Spread out evenly on baking sheet and roast for 35-40 minutes, or until desired tenderness is reached.
  4. Remove from oven and garnish with fresh thyme, if desired. Serve immediately.
