Balsamic Chicken Wrap with Arugula and Blue Cheese

This tasty wrap features seasoned organic chicken, arugula, sun dried tomato and crumbled blue cheese. Pair with a side of soup or salad for a delicious lunch or dinner. Serves 1-2.

Ingredients

  • 1 large tortilla or wrap
  • 3 ounces ROSIE® Organic Chicken Boneless Skinless Breast Tenders
  • 1 cup arugula
  • 1 sun dried tomato, sliced
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons crumbled blue cheese
  • 2 teaspoons Barons Garlic Olive Oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Barons Basil Olive Oil
  • Barons 25 Star Balsamic Vinegar

Directions

  1. Heat garlic olive oil in a pan over medium heat.
  2. Season chicken with garlic powder, Italian seasoning and salt and pepper.
  3. Add chicken to pan and sauté until fully cooked. Dice chicken into cubes and set aside.
  4. Fill tortilla or wrap with chicken, arugula, sun-dried tomato, red onion, and blue cheese.
  5. Lightly drizzle the filling with basil olive oil and balsamic vinegar.
  6. Roll up tortilla tightly and cut in half. Serve immediately.
