Cheese Omelet with Green Chile Sausage

3 eggs

1 Bilinski’s Southwestern Green Chile Chicken Sausage, sliced

1/3 cup shredded Monterey Jack cheese

¼ cup diced white onion

2 tablespoons Zia Roasted Hatch Green Chile

1 tablespoon fresh cilantro, chopped

2 teaspoons Barons Garlic Cilantro Olive Oil

2 teaspoons butter

Salt and pepper, to taste

Optional toppings: avocado, pico de gallo, cotija cheese


1Heat one teaspoon of olive oil in a pan over medium heat.

2Add sausage and saute until browned, stirring frequently. Remove sausage from pan and set aside.

3Add remaining teaspoon of olive oil and saute diced onion until lightly browned, stirring frequently. Remove onion from pan and set aside.

4Heat butter in a pan over medium-low heat. Whisk eggs and add to pan.

5Continue to cook until eggs are set. Sprinkle cheese, onion, sausage and chile evenly over eggs.

6Gently fold omelet in half. Continue to cook until eggs are cooked through and cheese has melted.

7Season with salt and pepper and top with fresh cilantro. Serve immediately with toppings, if desired.
