Organic Zucchini Noodles with Pesto and Fresh Tomatoes

1Heat a pan over medium heat. Add garlic olive oil and zucchini noodles and quickly saute for 2-4 minutes, or until noodles are slightly softened.
2Remove from heat and toss with tomatoes, fresh mozzarella, and pesto.
3Season with salt and pepper. Drizzle with balsamic vinegar and serve immediately.
