Kale Caesar Salad with Stovetop Croutons

1 bunch fresh kale, stems removed, chopped

1/3 cup shaved asiago cheese

Caesar dressing, to taste

For croutons:

2 cups cubed French baguette

2 tablespoons Barons Market Garlic Olive Oil or Tuscan Herb Olive Oil

Salt, to taste


1Heat oil in a large skillet over medium heat. Add bread cubes and toss in oil to coat. Place bread cubes in a single layer and toast for 5 minutes, or until cubes are golden brown on all sides. Remove from pan and season with salt.

2Wash and dry kale. In a large bowl, toss kale with Caesar dressing and shaved asiago. Top with croutons and serve immediately.
