Creamy Chicken Enchiladas

  • Yields: Serves 4-5


5 corn tortillas

1 pouch Frontera Red Chile Enchilada Sauce

1.5 cups shredded rotisserie chicken

1 green bell pepper, diced

1 yellow bell pepper, diced

2 teaspoons oil

2 cloves garlic, minced

1/4 cup sour cream

2 cups shredded cheese, divided

Handful of fresh cilantro, chopped

Salt and pepper, to taste


1Preheat oven to 400°F.

2Sauté bell peppers and garlic in oil until tender. In a large bowl, combine bell peppers, chicken, sour cream, cilantro and 1 cup of cheese. Mix until well combined. Season with salt and pepper, to taste.

3Wrap tortillas in a damp paper towel and microwave until soft, about 1 minute. Fill each tortilla with chicken mixture and roll up.

4Place in an 8x8 baking dish and cover evenly with sauce. Sprinkle on remaining cheese and bake for 15 minutes. Serve immediately.
