Balsamic and Honey Poached Pears with Gelato

- Yields: Serves 6
1In a medium saucepan over low heat combine apple cider, balsamic vinegar, honey, and brown sugar. Add in vanilla, cinnamon, and butter. Whisk until well combined.
2Halve and core pears. Add pear halves to saucepan and bring liquid to a simmer.
3Over low heat, continue to poach pears, flipping occasionally. Poach halves until pears are tender, about 25 minutes. Remove pears from poaching liquid and set aside.
4Over medium heat, reduce poaching liquid for ten minutes or until syrup-like consistency is reached.
5Plate each pear half with a scoop of gelato and drizzle with balsamic reduction. Garnish with sliced almonds and serve immediately.
